  • The best icing to maintain a cake's shape and decor for a hot summer day is fondant. Buttercream and glazed finishes tend to become soft and could melt away. Fondant on the other hand holds its shape and will not become glossy.
  • Try to keep the cake is in a shady spot. Direct sunlight will cause any finish and most cake flavors to become unstable. Can't find any shade? Use a parasol or small canopy. If there is no way around having the cake sit out most of the day, choose a cake with a buttercream filling as opposed to a mousse cake. 
  • If you are afraid that insects and sand may blow onto the cake-try this trick. Completely wrap your beach wedding cake in sparkling clear cello and tie the top with a beautiful ribbon. Your guests will be anxious to see what's inside and your cake will be saved.
